Made from Uddeholm 15n20 high carbon steel from a retired lumbermill bandsaw blade, black walnut, and brass pins. The Nakiri style blade is a Japanese type of knife that is best suited for processing vegetables and fruit. In conjunction with a thin, flat ground primary bevel, it lends itself to a high degree of control. Heat treated to about 61 Rockwell for good edge retention, while retaining enough toughness to not chip easily and be sharpened with little difficulty. Comes with edge protector.
